Tasting is important because it is the only real method we have for assessing a wine, regardless of our reasons for carrying out an assessment.

Viticulture, the science of growing grapes, is important because so many of the wine's characters depend upon this - the grape(s) used, the climate, the vintage and so on.

Vinification, the science of making wine, is important because this is how the raw material is converted into a wine we can assess.
